The Chaîne des Rôtisseurs is a prestigious international association dedicated to the art of gastronomy. During Louis XII's reign, the guild's expertise expanded to include other meats and poultry, including game, and it was named “Rôtisseurs”.
Creation of the Coat of Arms: Featuring two crossed spits and four larding utensils in the center, surrounded by hearth flames. Today's version includes fleurs-de-lys and two chains with the association’s new name. The inner chain represents professionals, and the outer chain symbolizes non-professionals.
For over four centuries, the Guild of Goose Roasters advanced the culinary arts, meeting the standards of the “Royal Table” until the guild system was dissolved during the French Revolution in 1793.
The Rôtisseurs were revived in 1950 by Jean Valby, along with gastronomes Curnonsky and Dr. Auguste Bécart, and professionals Louis Giraudon and Marcel Dorin, who founded the Confrérie de la Chaîne des Rôtisseurs.
The Chaîne des Rôtisseurs expanded its role in the food world by moving beyond restaurants and hotels to focus on ‘Caring and Sharing’. On January 2, 2008, it registered a charity, the Association Caritative de la Chaîne des Rôtisseurs, in Paris. This allowed the launch of social development programs to nourish and improve living conditions for those in need, especially children.
